Description

A delightful lemon thyme cake with a sweet drizzle.


Ingredients

  • 1 cup unsalted butter
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • Zest of 2 lemons
  • 2 tbsp lemon juice
  • 1 cup milk
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp fresh thyme leaves
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a saucepan over medium heat, melt the unsalted butter until golden brown, stirring frequently. Remove from heat and avoid overmixing.
  3. Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
  4. For the drizzle, mix powdered sugar with lemon juice in a small bowl. Once the cake has cooled slightly but is still warm, pour the drizzle over it.
