Description
This cauliflower fried rice is a healthy and delicious alternative to traditional fried rice, packed with vegetables and flavor!
Ingredients

- 1 medium head cauliflower (about 4 cups riced)
- 1 cup carrots, finely chopped
- 1 cup green peas (frozen)
- 4 green onions, sliced (white and green parts)
- 3 cloves garlic, minced
- 2 large eggs, beaten
- 3 tbsp low-sodium soy sauce
- 2 tbsp sesame oil
Instructions
- Prepare the Cauliflower Rice: Remove leaves and cut cauliflower into florets. Pulse in a food processor until it resembles rice grains.
- Sauté Aromatics: Heat a large skillet over medium heat with 1 tbsp sesame oil. Add minced garlic and half of the green onions; cook for about one minute.
- Add Veggies: Stir in carrots and peas, sautéing for five minutes until tender.
- Cook the Eggs: Push veggies to one side; add beaten eggs to the other side. Scramble until set, then mix everything together.
- Combine with Cauliflower Rice: Add riced cauliflower and soy sauce; stir well and cook for another five minutes until heated through.
- Serve: Transfer to bowls or plates and garnish with remaining green onions.
Notes
- This recipe is gluten-free if you use gluten-free soy sauce.
