- 1 small onion, diced
- 1 tsp garlic powder

- 1 can (10 oz) cream of mushroom soup
- 1 can (10 oz) cream of chicken soup
- 1 can (15 oz) diced tomatoes (do not drain)
- 1 cup cooked white rice
- 2 cups shredded cheddar cheese
- 1/4 cup milk
- Optional: green onions or parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Cook the ground beef and onions: In a large skillet over medium heat, brown the ground beef with diced onions until the beef is no longer pink. Drain off any excess fat.
- Season the beef: Add garlic powder, onion powder, paprika, salt, and pepper to the cooked beef. Stir to coat the meat evenly in those savory spices.
- Mix the base: In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, diced tomatoes (with their juice), milk, and cooked rice. Stir until well combined.
- Combine: Add the seasoned beef to the bowl with the soup and rice mixture. Mix well.
- Layer in the cheese: Stir in 1 cup of shredded cheddar cheese. Pour the entire mixture into your prepared baking dish and smooth the top.
- Top and bake: Sprinkle the remaining 1 cup of cheese evenly on top. Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly around the edges.
- Garnish and serve: Let the casserole rest for about 5 minutes before serving. Sprinkle with chopped green onions or parsley if desired.
