- 4 salmon fillets (6 oz each)
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- ½ cup low-sodium chicken broth
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- 3 tbsp unsalted butter
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the salmon fillets dry and season generously with salt and pepper.
- In a skillet, melt the butter over medium heat. Sauté the minced garlic until fragrant (about 1 minute).
- Pour in the heavy cream and chicken broth; stir and simmer for about 3 minutes until slightly thickened.
- Add spinach and Parmesan cheese; mix until the cheese melts.
- Place salmon in a baking dish, pour the sauce over them, and bake for 15-20 minutes or until salmon flakes easily with a fork.

- This dish pairs well with a side of steamed vegetables or a fresh salad.
