- 1 lb ribeye steak, thinly sliced
- 1 tablespoon avocado oil
- 1 medium green bell pepper, sliced
- 1 small yellow onion, sliced
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 6 slices provolone cheese
- 2 large eggs
- 1 ½ cups shredded mozzarella cheese (for dough)
- ¾ cup almond flour
- 1 teaspoon baking powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
Instructions
- Cook the Filling: Start by heating avocado oil in a skillet over medium-high heat. Add your thinly sliced ribeye steak and cook until browned and just cooked through. Remove the steak and set it aside. In the same skillet, sauté the sliced onions and green bell peppers until soft and slightly caramelized—about 5 to 7 minutes. Return the steak to the pan and stir in the cream cheese until melted and creamy. Set aside.
- Prepare the Dough: In a microwave-safe bowl, combine shredded mozzarella (1½ cups) and almond flour. Microwave in 30-second intervals, stirring in between, until the cheese is melted and you can knead the mixture into a smooth dough. Add eggs, baking powder, garlic powder, and salt. Mix until fully combined. The dough will be sticky, but that’s what gives it its chewy, satisfying texture once baked.
- Assemble the Rolls: Preheat your oven to 375°F (190°C). Roll the dough out between two sheets of parchment paper until it’s about ¼-inch thick. Spread the steak mixture evenly over the dough. Lay the provolone slices on top, then gently roll it up like a cinnamon roll, peeling the parchment as you go. Slice into 6 even rolls.
- Bake Until Golden: Place the rolls on a parchment-lined baking tray and bake for 20–25 minutes, or until golden brown and bubbly. Let them cool slightly before serving to allow the cheese to set a little—though good luck resisting that molten center.
