Ingredients

- 1 lb shrimp peeled and deveined
- 1 cup long grain rice
- 2 cups chicken broth
- 3 tbsp butter
- 2 tbsp olive oil
- 4 cloves garlic minced
- 2 tbsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley chopped
Instructions
- Cook rice with chicken broth according to package instructions then keep warm.
- Season shrimp with salt and black pepper on both sides.
- Melt 2 tbsp butter in a skillet over medium heat then add garlic and cook 30 seconds.
- Add shrimp in a single layer and cook 2 to 3 minutes per side until opaque.
- Stir in remaining butter, olive oil, and lemon juice then coat shrimp evenly.
- Spoon shrimp and sauce over cooked rice and mix gently.
- Garnish with parsley and serve immediately.
