Description
Layered mint brownies made easy using a boxed mix, topped with mint frosting and chocolate ganache.
Ingredients

- 1/2 cup unsalted butter (softened to room temperature)
- 2 cups powdered sugar
- 2 tablespoons milk or heavy cream
- 1 teaspoon peppermint extract
- 1–2 drops liquid or gel green food coloring (optional)
- 1/2 cup unsalted butter
- 1 cup semi-sweet chocolate chips
Instructions
- Using mixer, beat the butter on medium speed until smooth and creamy, about 2 minutes.
- Add the powdered sugar and milk and beat for 2 minutes on low speed, then increase to high speed and beat for 1 additional minute.
- Add the mint extract and food coloring and beat on high for 1 full minute.
- Frost cooled brownies and place the baking sheet in the refrigerator while you make the chocolate ganache.
- Melt the butter and chocolate chips in microwave safe bowl in 20 second increments, stirring after each, in the microwave.
- Once melted and smooth, pour over mint layer.
- Gently spread with a knife or offset spatula.
- Let ganache set for 20 minutes or chill the finished recipe 30 minutes before cutting for cleaner slices.
- For clean cutting, use a very sharp large knife, wiping the knife off with a paper towel between each cut.
