Mint Layered Brownies

Description

Layered mint brownies made easy using a boxed mix, topped with mint frosting and chocolate ganache.


Ingredients

Scale
  • 1/2 cup unsalted butter (softened to room temperature)
  • 2 cups powdered sugar
  • 2 tablespoons milk or heavy cream
  • 1 teaspoon peppermint extract
  • 12 drops liquid or gel green food coloring (optional)
  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Using mixer, beat the butter on medium speed until smooth and creamy, about 2 minutes.
  2. Add the powdered sugar and milk and beat for 2 minutes on low speed, then increase to high speed and beat for 1 additional minute.
  3. Add the mint extract and food coloring and beat on high for 1 full minute.
  4. Frost cooled brownies and place the baking sheet in the refrigerator while you make the chocolate ganache.
  5. Melt the butter and chocolate chips in microwave safe bowl in 20 second increments, stirring after each, in the microwave.
  6. Once melted and smooth, pour over mint layer.
  7. Gently spread with a knife or offset spatula.
  8. Let ganache set for 20 minutes or chill the finished recipe 30 minutes before cutting for cleaner slices.
  9. For clean cutting, use a very sharp large knife, wiping the knife off with a paper towel between each cut.
