Description

Delicious steak fajitas with bell peppers and onions, served with warm tortillas and your favorite toppings.


Ingredients

  • 1 ½ pounds flank steak or skirt steak, thinly sliced against the grain
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large red bell pepper, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 small flour or corn tortillas, warmed
  • Fresh cilantro, chopped
  • Lime wedges
  • Sour cream or Mexican crema
  • Guacamole or sliced avocado
  • Salsa or pico de gallo

Instructions

  1. In a medium bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper.
  2. Add the thinly sliced steak to the bowl and toss to coat evenly. Let marinate for at least 15 minutes at room temperature, or cover and refrigerate for up to 2 hours.
  3. Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
  4. Add the sliced bell peppers and onion. Season with a pinch of salt and pepper.
  5. Cook, stirring occasionally, until the vegetables are tender-crisp and slightly charred, about 8-10 minutes. Transfer to a plate and set aside.
  6. In the same skillet, increase the heat to high. Add the marinated steak in a single layer, working in batches if necessary to avoid overcrowding.
  7. Cook without moving for 2-3 minutes, allowing a good sear to form. Flip the steak slices and cook for another 1-2 minutes, or until cooked to your desired doneness.
  8. Return the cooked vegetables to the skillet with the steak. Toss everything together and cook for 1 minute to reheat.
  9. Serve immediately with warm tortillas and your favorite toppings like fresh cilantro, lime wedges, sour cream, and guacamole.
