Description
Delicious steak fajitas with bell peppers and onions, served with warm tortillas and your favorite toppings.
Ingredients

- 1 ½ pounds flank steak or skirt steak, thinly sliced against the grain
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 large red bell pepper, thinly sliced
- 1 large green bell pepper, thinly sliced
- 1 large yellow onion, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 small flour or corn tortillas, warmed
- Fresh cilantro, chopped
- Lime wedges
- Sour cream or Mexican crema
- Guacamole or sliced avocado
- Salsa or pico de gallo
Instructions
- In a medium bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper.
- Add the thinly sliced steak to the bowl and toss to coat evenly. Let marinate for at least 15 minutes at room temperature, or cover and refrigerate for up to 2 hours.
- Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add the sliced bell peppers and onion. Season with a pinch of salt and pepper.
- Cook, stirring occasionally, until the vegetables are tender-crisp and slightly charred, about 8-10 minutes. Transfer to a plate and set aside.
- In the same skillet, increase the heat to high. Add the marinated steak in a single layer, working in batches if necessary to avoid overcrowding.
- Cook without moving for 2-3 minutes, allowing a good sear to form. Flip the steak slices and cook for another 1-2 minutes, or until cooked to your desired doneness.
- Return the cooked vegetables to the skillet with the steak. Toss everything together and cook for 1 minute to reheat.
- Serve immediately with warm tortillas and your favorite toppings like fresh cilantro, lime wedges, sour cream, and guacamole.

- Marinate the steak for up to 2 hours for better flavor.
