Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. In a large pot of salted boiling water, cook the orzo according to package instructions. Once done, drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side, or until they turn pink and are fully cooked.
  4. Add the cooked orzo to the skillet along with the lemon juice and zest. Toss everything together until well combined.
  5. Taste and adjust the seasoning as needed.
  6. Remove from heat and garnish with chopped parsley for an extra touch of freshness.
