Description

A refreshing and nutritious quinoa salad with fresh vegetables and a zesty dressing.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Rinse the quinoa under cold water, then combine it with vegetable broth in a saucepan. Bring to a boil, reduce the heat, and cover, allowing it to simmer for about 15 minutes until the quinoa is fluffy.
  2. Once the quinoa is cooked, transfer it to a large bowl and let it cool for a few minutes. Add the cherry tomatoes, cucumber, bell pepper, and avocado to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.
  4. Pour the dressing over the quinoa and vegetables, then gently toss everything together until the ingredients are evenly coated.
