A fresh and vibrant mango black bean salad that is perfect for summer gatherings.
Ingredients

- 1 can (15 oz) black beans, drained and rinsed
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp ground cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, mango, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 15 minutes before serving.
