A delightful mix of Corn Chex with a hint of carrot cake flavor, perfect for a sweet snack.

- 7 cups Corn Chex cereal
- 1½ cups powdered sugar
- ½ cup carrot cake mix
- ½ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 12 oz. white chocolate chips
- 1 cup pecan halves (optional)
Instructions
- Place the Corn Chex cereal in an extra-large mixing bowl and set aside.
- In a small mixing bowl, stir together the powdered sugar, carrot cake mix, cinnamon, and nutmeg. Set aside.
- Add the white chocolate chips to a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until melted and smooth.
- Pour the melted white chocolate over the cereal. Gently fold with a rubber spatula until the cereal is evenly coated, being careful not to crush it.
- Sprinkle the sugar mixture over the coated cereal. Gently fold until well coated.
- Spread the mixture onto a baking sheet lined with parchment paper, or onto a large sheet of parchment paper. Let it cool for 20-30 minutes, or until set.
- Break up any large clusters and stir in the pecans, if using.
- Serve right away, refrigerate for a firmer texture, or store for later.
Notes
- This snack is best enjoyed fresh, but it can be stored in an airtight container for a few days.
- For a more intense carrot flavor, consider adding shredded carrots.
