Marinated Chicken Thighs

Description

Deliciously marinated chicken thighs perfect for grilling or baking.


Ingredients

Scale
  • 2 tablespoons olive oil (not extra virgin)
  • 1 lime (juice and zest)
  • 2 cloves garlic (minced)
  • ¼ cup fresh cilantro (chopped)
  • 1 tablespoon honey
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 pounds chicken thighs, boneless and skinless

Instructions

  1. In a large bowl, combine all of the marinade ingredients (olive oil, zest of a lime, juice of a lime, garlic, cilantro, honey, chili powder, cumin, salt, and pepper).
  2. Give the marinade a whisk then add the chicken thighs, and mix so the chicken thighs are thoroughly coated.
  3. Cover, and allow to marinate in the fridge for at least 30 minutes but preferably longer, and up to 24 hours. Alternatively, this can be done in a ziptop bag.
  4. Remove the chicken from the marinade and cook using your preferred method, until the chicken is cooked through, and reaches an internal temperature of 165°F/74°C.

Notes

  • Marinating for longer enhances the flavor.
  • This marinade can also be used for other proteins, such as shrimp or pork.
