Description
Deliciously marinated chicken thighs perfect for grilling or baking.
Ingredients
Scale
- 2 tablespoons olive oil (not extra virgin)
- 1 lime (juice and zest)
- 2 cloves garlic (minced)
- ¼ cup fresh cilantro (chopped)
- 1 tablespoon honey
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 pounds chicken thighs, boneless and skinless
Instructions
- In a large bowl, combine all of the marinade ingredients (olive oil, zest of a lime, juice of a lime, garlic, cilantro, honey, chili powder, cumin, salt, and pepper).
- Give the marinade a whisk then add the chicken thighs, and mix so the chicken thighs are thoroughly coated.
- Cover, and allow to marinate in the fridge for at least 30 minutes but preferably longer, and up to 24 hours. Alternatively, this can be done in a ziptop bag.
- Remove the chicken from the marinade and cook using your preferred method, until the chicken is cooked through, and reaches an internal temperature of 165°F/74°C.
Notes
- Marinating for longer enhances the flavor.
- This marinade can also be used for other proteins, such as shrimp or pork.
