- 1 lb baby potatoes
- 1 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss baby potatoes with olive oil, garlic powder, salt, and pepper until well coated.
- Sprinkle Parmesan cheese over the potatoes and toss again to coat evenly.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes or until golden brown and crispy.
- Serve warm, garnished with fresh parsley if desired.
Notes
- Make sure to cut any larger potatoes in half for even cooking.
- Feel free to add other seasonings or herbs as desired.
