- 2 cups cabbage, shredded
- 1 cup carrots, shredded
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Cooked rice or cauliflower rice (for serving)
- Sesame seeds (for garnish, optional)
Instructions
- Heat sesame oil in a large skillet over medium heat. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add ground chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
- Add in shredded cabbage and carrots, cooking until softened, about 3-4 minutes.
- Stir in soy sauce, season with salt and pepper, and mix well.
- Serve the chicken and vegetable mixture over cooked rice or cauliflower rice.
- Garnish with sliced green onions and sesame seeds if desired.
