Description

This delicious ground chicken stir-fry is loaded with fresh vegetables and flavors, perfect for a quick weeknight meal.


Ingredients

  • 1 lb ground chicken
  • 2 cups cabbage, shredded
  • 1 cup carrots, shredded
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or cauliflower rice (for serving)
  • Sesame seeds (for garnish, optional)

Instructions

  1. Heat sesame oil in a large skillet over medium heat. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
  2. Add ground chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  3. Add in shredded cabbage and carrots, cooking until softened, about 3-4 minutes.
  4. Stir in soy sauce, season with salt and pepper, and mix well.
  5. Serve the chicken and vegetable mixture over cooked rice or cauliflower rice.
  6. Garnish with sliced green onions and sesame seeds if desired.

Notes
