- 8 ounces linguine pasta
- 1 pound large shrimp, peeled and deveined
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (for serving)
- Fresh lemon wedges (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if desired). Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
- Stir in the fresh spinach, cooking until wilted and tender.
- Add the cooked linguine to the skillet, tossing everything together to combine. You may add a bit more olive oil if needed for moisture.
- Remove from heat. Serve with grated Parmesan cheese and fresh lemon wedges for garnish.
