Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (for serving)
  • Fresh lemon wedges (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if desired). Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  4. Stir in the fresh spinach, cooking until wilted and tender.
  5. Add the cooked linguine to the skillet, tossing everything together to combine. You may add a bit more olive oil if needed for moisture.
