Description

These fudgy brownies are rich and delicious, topped with a coconut and pecan frosting that will take your dessert to the next level!


Ingredients

  • 1/2 cup unsalted butter (melted)
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 box Betty Crocker Fudge Brownie Mix
  • 3 tablespoons milk of choice (almond milk recommended)
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 can sweetened condensed milk (14 oz, not evaporated)
  • 3 egg yolks (slightly beaten)
  • 1/2 cup unsalted or salted butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened coconut flakes
  • 1 cup pecans (chopped)
  • a pinch of salt (or 2 if using unsalted butter)

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray an 8×8 inch baking pan with non-stick cooking spray. Line with parchment paper for easier removal, if desired.
  3. In a medium bowl, whisk together cooled melted butter, sugar, eggs, and vanilla extract.
  4. Whisk in the unsweetened cocoa powder, flour, baking powder, and salt until well blended and spread in the pan.
  5. Bake for 25-30 minutes.
  6. Let brownies cool before frosting.
  7. Preheat oven to 350 degrees.
  8. Spray an 8×8 inch or 9×9 inch baking pan with non-stick cooking spray. Line with parchment paper for easier removal, if desired.
  9. Stir brownie mix, milk, oil, and eggs in a medium bowl until well blended and spread in the pan.
  10. For an 8×8 pan, bake for 45-50 minutes; for a 9×9 pan, bake for 32-36 minutes.
  11. Let brownies cool before frosting.
  12. Stir together sweetened condensed milk, egg yolks, and butter in a medium saucepan.
  13. Cook over low heat, stirring constantly, for about 10 minutes, until mixture is thickened and bubbly.
  14. Remove mixture from heat and stir in vanilla, salt, coconut, and pecans.
  15. Allow to cool for 15 minutes before spreading on brownies.

Notes

  • These brownies are great when served warm, with a scoop of vanilla ice cream on top!
  • You can substitute the vegetable oil with melted coconut oil for a different flavor.
