A delicious and creamy chocolate tiramisu made with cottage cheese and Greek yogurt.


Ingredients

  • 1 cup Greek yogurt
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sweetener (erythritol or stevia)
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso or strong coffee (cooled)
  • 14 ladyfinger biscuits or keto-friendly alternatives
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. Combine cottage cheese, Greek yogurt, sweetener, unsweetened cocoa powder, and vanilla extract in a mixing bowl. Blend until smooth.
  2. Quickly dip ladyfinger biscuits into the cooled espresso, maintaining their structure.
  3. Add a layer of the cottage cheese mixture over the ladyfingers in the baking dish.
  4. Continue layering with more ladyfingers and another layer of the cheesy mixture, finishing with the cheese mix on top.
  5. Chill in the refrigerator for at least 120 minutes.
  6. Dust the top with cocoa powder before serving.
