Description

This delicious sourdough pizza combines the unique flavor of sourdough discard with a wonderfully chewy crust.

Ingredients

Scale
  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 3/4 cup warm water (100°F)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried herbs (optional, oregano or basil)

Instructions

  1. In a large bowl, combine 1 cup of sourdough discard with 3/4 cup of warm water. Stir gently until smooth and cohesive—this is your flavorful base.
  2. Gradually incorporate 2 1/2 cups of all-purpose flour and 1 teaspoon of salt. Aim for a dough that’s slightly sticky but manageable.
  3. On a floured surface, knead the dough for about 5-7 minutes until it’s smooth and elastic.
  4. Transfer the dough to an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour.
  5. Preheat your oven to 475°F (245°C) while the dough rises.
  6. Once risen, punch down the dough and roll it out on a floured surface to your desired thickness.
  7. Carefully place the rolled-out dough on a pizza stone or a baking sheet lined with parchment paper.
  8. Add your favorite sauces, cheeses, and toppings.
  9. Slide the pizza into the oven and bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbling deliciously.
  10. Once baked, allow the pizza to cool for 5 minutes to let the crust firm up.
