Description

A delicious creamy chicken and orzo dish featuring fresh spinach and sun-dried tomatoes.


Ingredients

  • 1 pound chicken breast
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  2. Add the minced garlic to the same skillet and sauté for 1 minute until fragrant.
  3. Add in the orzo and chicken broth; bring to a boil. Reduce heat and let it simmer, stirring occasionally, until the orzo is cooked, about 10-12 minutes.
  4. Stir in the sun-dried tomatoes, spinach, and heavy cream. Cook until the spinach wilts, about 2-3 minutes.
  5. Add the chicken back to the skillet along with the Parmesan cheese, stirring until well combined. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh basil if desired.
